Faithy B’s Raw Peach Delight

I was at a friend’s house this past weekend for a Raw Food Round-up. 

She came up with a wonderfully raw-freshing dish right there on the spot after she realized that the peaches were ripe but not sweet. 

3 peaches (sliced)
2 tablespoons of agave nectar (syrup) 
ground cinnamon

Serving size: 1

Slice the peaches into eigths. Place them in a bowl. Drizzle the peach slices with agave (more or less to taste). Sprinkle a generous amount of cinnamon on top. Enjoy!
(This tasted like the “peach half” of peach cobbler to me!) 
I made this yesterday and added some raw cashews to the mix. Yum! Very filling.

A Juicer for the Novice

If I had to recommend an easy to use, inexpensive juicer for someone who is just getting started on this journey I would say the best one (best because it is the one I have used for the past two months, at least 5x a day) has to be the Hamilton Beach Big Mouth (chrome). 

  • Pros: Easy to clean! It comes with a cleaning brush to scrub the blade. It produces a lot of juice very quickly. It can handle just about any vegetable or fruit (even a chunk of ginger.) It also comes with a 8oz. container to catch the juice. What I like best is that the spout is high enough so that I can put a tall mason jar under it. (I use the mason jar to transport juice with me throughout the day.)
  • Cons:  not self-cleaning (but no juicer is) HA!
Remember:
  1. When juicing hard and soft items, alternate hard then soft, etc.
  2. Put a plastic bag in the bin that catches the pulp. This makes clean-up easy.

Simply Scrumptous Cucumber Rolls

1 or 2 seedless cucumbers
1 carrot
1 jicama
1 or 2 stalk(s) of celery
2 avocados (ripe)
1 onion
1 tomato (ripe)
1 or 2 anaheim pepper(s)
fresh cilantro
1 lime

1. Basically, you are making guacamole with the avocado (smashed); tomatoes, onions, Anaheim pepper and cilantro (all chopped as large or as small as you choose); and 1 or 2 lime(s) squeezed into the concoction.

2. Mix all of the above in a bowl.

3. Used a mandolin to slice the cucumber into long, thin strips.

4. Cut the jicama, carrots and celery into short, thin toothpick like sticks with a knife.

5. Slather the guacamole onto one side of a cucumber strip, adding jicama, carrot and celery in its center.

6. Carefully roll all the contents into form.

7. Secure the cucumber roll with a toothpick.

8. Begin munching.

9. Squeeze the other half of the lime into your water glass.

Prep time: about 10 min.

We have also used hummus to fill the rolls. Just as good.

Summer’s End Starburst

This is a fantastic drink for end of summer.

 

2 small lemons or 1 large lemon (peeled).
4 apples (sliced).
1 inch knob of fresh ginger (sliced). You can add more or less to taste.

Put all the contents in the juicer and enjoy.
This drink may remind you of a piece of lemon candy.

I typically drink this first thing in the morning. However, this drink is good at any time. Best when consumed on an empty stomache. Helps with both digestion and elimination.
